Halloween Meatloaf

  • 2 lbs ground beef
  • 1 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced bell pepper
  • 1 cup shredded pepper jack cheese
  • 1 cup bread crumbs
  • 2 eggs
  • 2 Tbs minced garlic
  • 1 Tbs dry thyme
  • 2 Tbs Creole seasoning (or to taste)
  • 2-3 strips of bacon


Mix all ingredients in a large bowl and knead until blended but do not over mix. Spray a sheet pan with non stick spray. Form meatloaf mix into a skull or your favorite Halloween shape. Wrap with bacon. Bake for 45 to an hour at 350 degrees or until an internal temperature of 160 degrees is reached. Garnish eyes with hard boiled eggs, cocktail olives, vermicelli pasta hair and Sriracha sauce.
