NEW ORLEANS (WGNO) – It’s a great time to eat crawfish! The experts at the LSU AgCenter say this year’s harvest is better than most.

Doctor Greg Lutz from the Aqua Culture Research Station says a few factors go into a good crawfish year.

  • The mild winter got them out of the ground early.
  • That means they have a head start on getting bigger.
  • They’re on a good growth schedule.
  • The rains last summer also helped, because the ground stayed wet. Crawfish from last year are still alive and growing.
