This Thursday, August 27, Café Adelaide is hosting a “Win-Win” dinner with Eat Fit NOLA, where guests will enjoy 5 courses of good-for-you dishes, along with a cocktail pairing by Cathead Vodka.
At Café Adelaide, Chef Carl Schaubhut puts a big focus on being able to eat, and drink, to enjoy yourself without worrying about over-indulging. He is especially passionate about bringing healthy options into his cooking, having just recently dealt with cancer this past year. Through his recovery, he is altering his way of dining and hopes to share his new ways with his guests at Café Adelaide.

Clio Street Cooler
- 1.5 oz Cathead Honeysuckle Vodka
- .5 oz Lime juice
- 1.5 oz Fresh grapefruit
- 5 drops Jalapeno-Lime Bitters
- 500 ml 151 Proof Rum
- 6 Jalapenos, Split & Stemmed
- Zest of 6 Limes
Infuse all of the ingredients for 2 days, then strain and bottle.

Chilled Pineapple and Blue Crab Gazpacho: Thai style marinated blue crab, shaved cucumber, crushed peanuts, basil gel, and crispy spiced sweet potato
Fire Roasted Mushroom Stuffed Creole Peppers: Seasonal mushrooms, roasted garlic, quinoa, herbs, parmesan, pea shoots, sauce Creole
Five Chile Crusted Yellowfin Tuna: Refried white beans, fennel-charred poblano salsa, fermented green tomato hot sauce, chile threads
Hickory Smoked Beef Tenderloin: Sweet corn puree, pecan romesco, pickled Louisiana plums, corn shoots
Coconut Summer Trifle: pecans, dates, shaved white chocolate, coconut ganache
