Bosch Pear Bread

  • 3 ripe organic Bosch pears (peeled, cored and mashed) for bread mixture
  • 3 ripe Bosch pears cored and cut in half
  • 1/4 cup raw honey
  • 1 egg, lightly beaten
  • 1 teaspoon real vanilla extract
  • 1/4 cup yogurt
  • 1 1/2 cups whole wheat flour
  • 1/2 cup coconut sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 2 tablespoons powdered sugar

Preheat oven to 325 degrees F.  Combine mashed pears, honey, egg, vanilla extract and yogurt in a large mixing bowl.  Stir together flour, coconut sugar, cinnamon, nutmeg, baking soda, baking powder and salt in a separate mixing bowl.  Gradually add flour mixture to wet ingredients, stirring until just combined.  Pour batter into an oiled 10 x 12 inch disposable pan.  Carefully Place cut pears 3 in a row each side of pan into batter, cut side up.  Bake for 1 hour or until toothpick inserted into center comes out clean.  Sprinkle with powdered sugar.
