NEW ORLEANS (WGNO) - It's National Potato Day.  The day to recognize one of the world's best staples.

WGNO News with a Twist features guy Wild Bill Wood says potato day is the day for potato poetry.

Wild Bill finds New Orleans Chef Daniel Esses.

Chef Daniel likes to make latkes, in the Jewish tradition, the potato pancakes cooked in oil to commemorate the eight days the oil lasted at the temple.

Chef Daniel even makes latkes from beets.

And he's the potato poet.

Here's what he penned for National Potato Day:

Latkes with vodka.

Vodka with latkes.

They taste so great,

Why don't we just eat eight?
