Caffe! Caffe! Eat Fit NOLA Pontchartrain Protein Power Salad

Makes 1 serving

Ingredients:

  • Bowl of mixed greens (approximately 3 cups)
  • 3.5 ounces grilled chicken, sliced
  • 2 cherry tomatoes
  • 1 ounce edamame, steamed and shelled
  • ½ ounce sliced almonds, toasted
  • 2 ounces Raspberry Mint Vinaigrette (recipe below)

Per serving (including vinaigrette): 470 calories, 32 grams fat, 4.5 grams sat fat, 460 mg sodium, 20 grams carbohydrate, 5 grams fiber, 9 grams sugar, 27 grams protein.

 Per serving (without vinaigrette): 230 calories, 7 grams fat, 1 gram saturated fat, 460 mg sodium, 14 grams carbohydrate, 5 grams fiber, 4 grams sugar, 27 grams protein

 Caffe! Caffe! Raspberry Mint Vinaigrette      

Makes 18-20 two-ounce servings

Ingredients:

  • 2 cups raspberry blush vinegar
  • 2 cups pomace oil (or extra virgin olive oil)
  • 2 tablespoon honey
  • 4 tablespoons chopped fresh mint
  • ½ teaspoon Swerve

Instructions:

Place all the above ingredients in a large bowl and whisk for 10 seconds.
