Ochsner’s Eat Fit NOLA has teamed up with Louis Armstrong International Airport and the Delaware North culinary team to offer Eat Fit-approved menu items at 4 locations throughout MSY airport.

The Airport will be serving up Eat Fit-approved dishes like Dooky Chase’s Redfish Orleans, Zatarain’s Kitchen’s Tchoupitoulas Chicken Salad, Ye Olde College Inn’s Light & Healthy Fish, and Copeland’s Balsamic Grilled Chicken Salad.

Dooky Chase’s is famous for their Redfish Orleans, and this variation served up at Louis Armstrong International Airport is Eat Fit-approved!

Redfish Orleans

Makes 4 servings

Ingredients:

  • 4 filets of fresh fish (7-9 ounces each)
  • 1 tablespoon unsalted butter, divided
  • ½ teaspoon salt
  • 1 teaspoon cayenne pepper
  • 2 cups water
  • 8 ounces fresh lump crabmeat topping (recipe below)

Instructions:

Heat pan to medium heat and add 1/2 tablespoon of butter.  Season fish with salt and cayenne pepper, and pan-sear four minutes on each side.  Top with fresh lump Crabmeat topping (recipe below).

 

Redfish Orleans Fresh Lump Crabmeat Topping | Dooky Chase’s

Makes 4 servings

Ingredients:

  • 2 cups fresh Lump Crab Meat
  • Fresh lemon

Instructions:

Add 1/2 tablespoon of butter to pan heated on medium heat, and fold in lump crabmeat.  Stir gently to heat through, and serve on top of fish.

Per serving: 440 calories, 7 grams fat, 2 grams saturated fat, 440 mg sodium, 5 grams carbohydrate, 2 grams fiber, 2 grams sugar, 75 grams protein.
