South Of The Border Chopped Blue Crab Salad
Yield: 1 Salad
1/4 pound crab meat
2 Cup Romaine chopped
1/4 cup black beans
1/4 cup corn kernels
1/2 cup Pico de Gallo
2 T green onions sliced
1/4 cup celery chopped
1/4 cup tomato chopped
1/4 cup cucumber diced
1/4 each avocado diced
8-10 inch tortilla
1 to 1 /12 cup cheese, cheddar or any blend
Dressing
1/4 cup lime juice
2 T honey
1/4 c olive oil
salt & pepper to taste
For salad
combine all ingredients except tortilla and cheese in bowl and toss well with as much of the dressing as you wish. Place on flat plate.
For tortilla pyramid
I take the tortilla and use a professional ring tool with a handle and I am able to hold the tortilla safely in the grease to make the tortilla salad shell. This is a little tricky to do at home for one or two salads. I would suggest the viewer at home make painted nachos and arranging them around the salad for dining. A painted nacho is where each individual chip is covered with cheese and the cheese is then melted and not the pile of chips one generally sees with nachos.
