Cookin’ with Nino: Turkey Burger with Blueberry Barbecue Sauce

NEW ORLEANS (WGNO)– Tuesday mornings mean one thing: Time to get cooking with Chef Nino.  Today he’s bringing us his recipes for blueberry BBQ sauce, and his new and improved turkey burgers.

BLUEBERRY BBQ SAUCE
Ingredients:

  • 2 pints Louisiana blueberries
  • 2/3 cup Louisiana honey
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 jalapeño pepper , seeded and minced
  • 1/2 cup chopped shallots
  • 1 tbsp. grated fresh ginger
  • ¼ teaspoon cayenne pepper
  • 2 tsp. fresh lime juice
  • 1/2 tsp. dry mustard

Kosher salt and fresh ground black pepper

INSTRUCTIONS:
Combine ingredients in a medium saucepan. Bring to a boil over medium heat; reduce heat and simmer until thickened, about 30 minutes.  Stir occasionally.

TURKEY BURGERS WITH GRATED ZUCCHINI AND YELLOW SQUASH
Ingredients:

  • 1 lb. Ground turkey
  • 1 medium zucchini, grated
  • 1 medium yellow squash, grated
  • 2 garlic cloves. finely chopped
  • 1 teaspoon Chef Nino’s Adrenaline Seasoning
  • 1 large egg
  • 1/3 cup bread crumbs
  • 3 tbsp. olive oil

INSTRUCTIONS:

Heat skillet with olive oil. In a large mixing bowl, combine turkey and other ingredients

Mix completely. Form mixture into 6 patties. Cook patties in olive oil 4-5 minutes until there is no pink on the inside.
