Get the Skinny in the Kitchen: La Thai Uptown’s Spicy Thai Beef Salad, Eat Fit NOLA-style

Spicy Thai Beef Salad

Makes 1 serving

6 oz. filet, pan-seared in 1 tablespoon olive oil and sliced

1/4 teaspoon house made Cajun seasoning

1 ½ cups spring mix greens

1 tablespoon steamed, then sliced carrots

1 Tablespoon fresh button mushrooms, sliced

1 Tablespoon thinly sliced red onion

5-6 thin slices of cucumber

1 Tablespoon chopped green onion

6 sprigs cilantro, chopped

3 cherry tomatoes, sliced in half


Juice from ½ lemon

Juice from 1 lime

1/4 teaspoon Tiparos fish sauce

Pinch fresh Thai bird chilis

1 teaspoon sugar

Pinch of salt

Heat olive oil in medium sauté pan over med-high heat, add seasoned sliced fillet, sear to medium rare on both sides (1-2 minutes). Remove from heat.

In mixing bowl, combine the beef, red onion, mushroom, 2 sprigs cilantro, teaspoon green onions & lime vinaigrette dressing. Mix all together.
In a large salad bowl, place mixed field greens in the center of bowl, then arrange the sliced pieces of beef in top & around the greens. Pour the rest of the ingredients AT&T dressing on top of the salad.

Garnish with the rest of the cilantro & green onions, and enjoy!
