We will be preparing 2 dishes.
In the first segment, we will do our taquitos appetizer.
3 pork carnitas fried in blended oil
Placed atop ranchero sauce and shredded lettuce.
Topped with pickled veggies (merliton, jicama, carrots and onions), crema and cotija cheese
For the second segment, we will be doing a mahi mahi torta with a side of mixed greens=0AGrilled mahi mahi with adobo seasoning.
Grill a torta bun and spread black bean mash onto one side.
Place mahi mahi on black beans. Top with spinach, avocado, pickled veggies and drizzled with chipotle ranch dressing.
On the side, we have mixed greens tossed with a lime-cilantro vinaigrette and cotija cheese
