To serve 4 pp.
4 6 oz. Organic Tofu steak
2 medium size green zucchini
2 medium size yellow zucchini
½ Extra virgin olive oil
1 whole lemon
10 medium parsnips (4 pounds total), peeled and chopped into 1/2-inch-thick slices
12 tablespoons (1 1/2 stick) Coconut Butter
½ cup chicken stock or low-sodium chicken broth
½ cup Flax Seed Milk
1 tablespoon fine sea salt
2 teaspoons freshly ground black pepper
In heavy large pot combine parsnips with enough cold water to cover. Remember to salt the water. Place over moderately high heat, cover, and bring to a boil. Continue boiling until tender, about 30 to 45 minutes. Drain.
Working in small batches while the parsnip is still hot using a vita-mix mixer to puree the hot parsnips, coconut butter and Flax Seed Milk. Transfer to large serving dish, stir in salt and pepper, and serve immediately
Using a mandolin (or peeler if you do not have a mandolin) make some tagliatelle with the green and the yellow zucchini.
Keep them separate and ice water while you are grilling the Tofu steak
When the Tofu Steak are nice and crispy outside and hot inside, start the zucchini salad, drained same amount of green and yellow zucchini and mixed them with some olive oil, lemon juice, salt and pepper.
Display your plate with the parsnip puree at the bottom of the plate, either keep your Tofu steak whole or slice it, and finish up with the zucchini salad.

WHY: Funds raised at the Heart & Soul Gala will help the American Heart Association to continue the fight against cardiovascular diseases and defects – the #1 killer in the state of Louisiana and in the country. Heart disease is the #1 killer of both men and women in our country and heart defects are the #1 killer of children. Louisiana continues to be one of the least healthy states in the nation, are the most obese & least physically active in the country. The American Heart Association funds research and educational programs both locally and nationally to lower these numbers.
One hundred percent of the funds raised through the Heart & Soul Gala is invested back into the New Orleans community through educational outreach programs, CPR training and certification, placement of automated external defibrillators, and funding for groundbreaking medical research.
This year alone, the American Heart Association invested over $2 million into rebuilding research here in New Orleans at such institutions as: Louisiana State University, Ochsner & Tulane.
