Taste of Covington
Bison medallion seasoned and pan seared served with corn pudding and gastrique garnished with fresh black and blueberries.
1 cup Blueberries
1 cup Blackberries
1 cup sugar
1/2 cup red wine
1/2 cup balsamic vinegar
all combined and reduced
1 cup corn flour
1/2 cup cornmeal
1 Tbs Baking powder
3 Tbs sugar
2 Tbs oil
1 stick melted butter
1 cup sour cream
2 cups corn
Combine and bake in an oven safe dish for an hour at 325 or until set and golden brown

COVINGTON, LA. – The dates are set for CBA’s Second Annual “A Taste of Covington” celebration April 4 through April 7, 2013. This year’s event will be bigger and better than ever as we honor Covington’s Bicentennial! Our title sponsors are Glazer’s Domaines & Estates, Acquistapace’s Covington Supermarket, the City of Covington, The Southern Hotel, Gulf Coast Bank, Rosemary’s Closet, High 5 Studio, Incentives, and The St. Tammany News with more sponsors to come! We are also pleased to have Tom Fitzmorris as our honorary chairman, with Annadele’s Plantation hosting one of his famous “Eat Club” dinners and a live broadcast on Thursday, April 4 from 3 to 6pm.

5:30 – 6:30pm: Chefs’ Cooking Demos and Wine Tastings at The Trailhead

7:00 – 10:00pm: CBA Merchant Stroll and Wine Tastings
Twenty businesses in downtown Covington will be featured in the stroll. Each merchant will feature a different wine selection hosted by Glazer’s Domaines and Estates. Live music will be featured throughout downtown. Participating merchants are:
