Bananas Foster Bread Pudding

Yield: One full pan

INGREDIENTS:

2 1/2 loaf            Stale French Bread

12 EA                     Eggs

2.5 C                    Sugar

1 C                        Brown Sugar

1 QT                       Heavy Cream

1/2 GAL               Milk

1/4 C                      Banana Extract

1/4 C                      Rum Extract

PROCEDURE:

• Cut bread into 2” pieces; lay evenly in 2” full hotel pan

• In large mixing bowl, mix all other ingredients together, lightly beating the eggs

• Evenly pour over the bread

• Bake at 350º for 30 minutes

• Hotel wrap (film and foil) and bake for an additional 40 minutes

• Remove from oven, allow to cool

• Label, date, rotate, refrigerate
