Locally Made Rocket Pots Speed up Boiling Process

The inventor of the Cajun Rocket Pot has enjoyed backyard crawfish boils and barbeques for years at the family home in Madisonville, LA.   When he became tired of crawfish boils being held up waiting for water to boil, he set out to create a more efficient boiling pot.

An electronics specialist by profession, he began tinkering in his garage with different ideas to increase the absorption of heat during the cooking process.  Thousands of man hours later, the ingenious new pot was finally being produced in Covington.

SEAFOOD GUMBO RECIPE

1 C. all purpose flour

1 C. canola oil

4 C. chopped onion

2 C. chopped celery

2 C. chopped green pepper

1 C. sliced green onion & tops

4 C. chicken broth

8 C. water

4 C. sliced okra

2 TBS paprika

2 TBS salt

2 tsp oregano

1 tsp ground black pepper

6 C. small shrimp, rinsed & drained

1 C. minced fresh parsley

2 TBS Cajun seasoning

This recipe is specifically designed for cooking in a Cajun Rocket Pot over a gas burner.

In an 8 Qt. Cajun Rocket Sauce Pot, combine flour & oil until smooth.  Cook over medium heat 3 minutes, stirring constantly.  Reduce to medium low to low.  Cook & stir about 5 minutes more, or until mixture is reddish brown.

Add the onion, celery, green pepper & green onions; cook & stir for 3 minutes.  Add the chicken broth, water, okra, paprika, salt, oregano & pepper.  Bring to boil.  Reduce heat and simmer, covered for 10 minutes.

Add shrimp & parsley.  Simmer uncovered, about 5 minutes more or until seafood is done.  Remove from heat. Stir in Cajun seasoning.

WEBB’S HAPPY BROOVY BREAD PUDDING

Stale French bread loaf, busted up

4 eggs

1 ¼ C. sugar

1 ½ tsp vanilla

1 ¼ tsp nutmeg

1 ¼ tsp cinnamon

¼ tsp allspice

½ stick butter

3 C. milk

2/3 C. raisons

1 C. pineapple chunks

This recipe is specifically designed to cook in a Cajun Rocket Pot.

Beat eggs until frothy.  Add sugar, vanilla, nutmeg, cinnamon, allspice, melted butter, beat on high.  Add milk, beat again.  Add raisons, mix all with bread chunks.  Top with pineapple chunks, halved cherries.

Bake@ 350 in a buttered 8 Qt Cajun Rocket Brazier Pot for 1 hour or until a toothpick stuck in comes out clean.
