Get the Skinny: Kitchen gadgets to make healthy eating even easier!
Cooking healthy can sometimes feel like more work in the kitchen, but there are many tools on the market made specifically to save us time & hassle. Here are 3 gadgets that can cut your prep and cleanup time in half!

RECIPE: LOW-CARB THAI PEANUT ‘PASTA’ (adapted fromwww.eatliverun.com).  Serves 6
Add chicken or shrimp to make this a complete meal or leave as is for a tasty side dish.
 
2pound zucchini (about 4-6 zucchini), washed and spiraled through a vegetable cutter
2 T olive oil
Handful of snow peas, pepper slices or other vegetables
½ cup peanut butter
2 T rice vinegar
1/3 cup less sodium soy sauce
1/3 cup warm water
2 tsp seasame oil
2 tsp honey
½ tsp red pepper flakes
1 knob ginger, grated (about 2 T)
Minced fresh cilantro
 
Slice zucchini using vegetable spiral cutter. Heat oil in a large skillet over moderately high heat.   Add zucchini and sauté, turning and stirring frequently, until just tender but not golden (about 5 minutes). 
 
Combine all ingredients from peanut butter to cilantro in a Magic Bullet or food processor, adding warm water for a thinner sauce if desired.   Toss zucchini pasta, sauce and all other ingredients together for a side dish or add chicken or shrimp to make a complete meal.
